Goals & Objectives of Handle Internship
Goal: Learn all of the recipes (that are currently on the menu) in the Handle recipe book by the end of my internship at Handle (April 17).
Objectives: Study the Handle recipe book.
Learn from other cooks and chefs in the kitchen as they cook Handle recipes.
Goal: Improve knife skills, making precise cuts, julienne, chiffonade, mince, back-slice by the end of my internship at Handle (April 17).
Objectives: Practice proper knife work daily at Handle.
Know different types of knives and which knife is used for each cut.
Goal: Calculate food and labor costs in menu changes and determine menu pricing by the end of my internship at Handle (April 17).
Objective: Use Food Cost Spreadsheet provided by Chef Matt.
Calculate labor costs for each menu item.
